Lime posset





400ml cream
150g sugar (or more or less)
6tbsp lime juice and zest (for decoration)
2 sheets gelatin




Heat the cream and the sugar in a saucepan until simmering, stirring continuously
Gradually add the lime juice (taste for sweetness)
Once happy, add the gelatin, stir for further minute.
Remove from heat and pour into ramekins, sundae dishes or glasses.
Once cooled and set, sprinkle on the zest for decoration
